This curry is the most warming, comforting, and creamy thing you’ll ever eat. It feels like a warm hug. If I had to eat one dish daily for the rest of my life, it would be this curry with a side of rice. YOU MUST MAKE THIS!
Ingredients
1 can coconut milk
1 can chickpea
1 medium-sized ginger
1 medium-sized onion
2 tomatoes
1 ½ tsp cumin powder
1 ½ tsp chili powder
Salt to taste
1 tbsp olive oil
Instructions
Dice the onion and tomatoes. Then roughly smash the ginger
In a pot or a shallow pan, add the oil in medium heat, then add the onion, tomatoes, and ginger. Stir it for about 2 mins
Then add the spices, mix it well, and add the chickpeas.
Once the chickpeas turn slightly golden brown, add the coconut milk and cover for 10-15 mins on low heat
Serve it on a bed of rice, and squeeze the lime as it gives that tangy flavor and goes well with the flavor of the curry.
Optional: you can your favorite veggies after adding the coconut milk and let it simmer until done to make it even more nutritious.
