Banana Oat Pancakes

Oh pancakes, we love you so much! My banana oat pancakes are so delicious and also kids approved! These are gluten-free, vegan and healthy. Packed with good carbs and fibers, these pancakes are perfect to enjoy on the weekends with your family and friends. Be creative with your toppings, some like it plain and some like to go all out. Either way, you’re in for a treat!

Ingredients

  • ½ cup oat flour 
  • 2 mashed bananas (riper the better)
  • 1 cup oat milk
  • 1 tsp vanilla extract 

Toppings

  • Cacao nibs
  • Coconut flakes
  • Maple syrup 
  • Pomegranate seeds 
  • Toppings totally depend on what you like, feel free to play dress up with your pancakes :) 

Instructions

  1. Mash the bananas in a bowl
  2. Add in the oat flour 
  3. Add the mix and vanilla extract 
  4. If the batter is too thin, add a little more flour 
  5. Brush your pan with some coconut oil and pour in the batter with a medium sized ladle
  6. Serve and Enjoyyy!
